Overview

NVQ Level 3 Diploma in Professional Cookery

These courses are designed for students who have completed a relevant NVQ programme at Level 2 and wish to attain advanced skills in food and beverage service, kitchen and larder or patisserie. Working within our professional kitchens or our food service outlets you will cover a variety of complex food and food and beverage units. As part of the course students  are required to attend and complete a 1 day per week work experience.

This course is designed for students who have completed an NVQ Food Preparation & Cooking programme at Level 2.

Course Content

Topics Covered

Working within our professional and realistic working environment; which includes, Larder, Pastry and Production kitchens, you will cover a variety of food units, these may include:

  • Complex meat and poultry dishes
  • Complex fish cookery
  • Complex vegetarian cookery
  • Complex hot & cold sauces
  • Preparing game dishes

In addition students will spend 1 day a week on work placement. In the past, our students have undertaken their work placements at:

  • Rules restaurant
  • The Ivy
  • The Dorchester
  • Chapters
  • Boulangerie Jade

Practicals
Level 3 Hospitality & Catering students will have practical lessons regularly. In addition Level 3 students undertake a work-placement
one day per week.

Exams
NVQ programmes are assessment based qualifications, students are continually assessed across the academic year; both in practical & theory. In addition students may work towards achieving GCSE in maths & English.

Entry Requirements

Usually, this course is accessible to students who have achieved an NVQ in Food Preparation and Cooking at Level 2.

GCSE English & Maths Grade 4+.
